For most Palestinians, Za'atar is more than just an herb or spice blend—it's an essential part of their identity. Over time, it has become a symbol of Palestinian culture, representing resilience and strength, with its robust plants embodying strength in the face of adversity.
Za'atar's rich, aromatic flavour comes from a blend of sumac, roasted sesame seeds, salt, and, most importantly, thyme, which is indigenous to Palestine.
